With May being a very special month for us at the Jennie Wade house, we would like to feature this month’s recipe from a cookbook available at Jennie Wade House titled “Amish Friends Cookbook”. It was during the month of May that Jennie Wade was born. We think she would of approve and enjoy this month’s recipe for Rocky Road Candy. Enjoy and have a wonderful Spring.
Rocky Road Candy
- ½ cup butter or margarine
- ½ cup powdered sugar
- 1 egg, beaten
- 1 cup chocolate or butterscotch chips
- 3 or 4 cups miniature marshmallows
- 10 graham cracker squares
In a double boiler, combine butter, powdered sugar, egg, and chocolate chips. Heat and stir until melted. Cool slightly. Add marshmallows. Line bottom of ungreased 8×8 inch pan with graham crackers. Pour melted mixture on top. Cool. Cut into squares.
