Chocolate Coffee Cake with Peanut Butter Icing

Amish Friends Cookbook As the holiday season is upon us, we would like to share recipe for breakfast from one of our new cookbooks, Lancaster County Cookbook. It features so many wonderful recipes that are popular in not just Lancaster County, but South Central PA as well. The recipe is for Chocolate Coffee Cake with Peanut Butter Icing.

Chocolate Coffee Cake with Peanut Butter Icing:


  • ¾ cup cooking oil
  • 2  cups sugar
  • 2 eggs
  • 2 cups flour
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 2 tsp baking soda
  • ¾ cup cocoa powder
  • 1 cup of milk
  • 1 tsp vanilla
  • 1 cup of prepared black coffee

Peanut Butter Icing:

  • ¼ cup peanut butter
  • 1 lb. powdered sugar
  • ¼ tsp vanilla
  • 4-5 tsp of milk

1. To prepare cake combine all ingredients in the order given and mix well. Pour into greased and floured 9”x13” baking pan.

2. Bake at 375 for 45 minutes or until toothpick inserted in center comes out clean. Let cool 1 hour.

3. Meanwhile prepare icing by combining all ingredients and beating until smooth and creamy. Frost cake and serve.
