Velvet Cake Layers

amishcookbook-webWith the Holiday Season upon us, we decided to feature a simple recipe from the cookbook Amish Ladies Cookbook for Amish Ladies with Old Husbands. This recipe is simple yet elegant and makes a perfect dessert for when company visits.

Velvet Cake Layers

  • 1  cup shortening
  • 2  cups sugar
  • 1  cup of milk
  • 4  eggs
  • 3  cups cake flour
  • 2 tsp. baking powder
  •  ½ tsp. salt
  •  1  tsp. vanilla

Cream shortening and sugar. Add eggs, 1 at a time beating after each. Sift together flour, baking powder, and salt. Add and alternate with milk to creamed mixture. Add vanilla and bake in 2 greased 9-inch layer pans. Bake at 375 for 35 minutes. Cool and remove from pan: frost to taste.
