Ulysses Grant’s Lemon Pie

Capitol Hill Cooks Christmas will be here before we know it and as part of our special Presidential Christmas celebration at the Hall of Presidents, we will be hosting Mrs. Grant on December 12th between the hours of 11-2 to discuss Christmas traditions at the White House during Grant’s Presidency.

Below is a favorite treat of the Grants from the cookbook Capitol Hill Cooks.


Ulysses Grant’s Lemon Pie

  • 2 eggs
  • ½ cup of lemon juice
  • 2 teaspoons lemon zest, grated
  • 1 ¼ cups sugar
  • ¼ teaspoon salt
  • 1 cup raisins
  • ¼ cup water
  • 1/3 cup coconut, shredded
  • 2 pie crust

Preheat oven to 450 degrees.

Beat eggs lightly. Add remaining ingredients, except pie crust. Mix well. Line the bottom of a pie pan with I pie crust. Pour filling into

The pan. Put the top crust over the filling and crimp together the edges. Prick the top crust in a decorative pattern. Bake 15 minutes

At 450 degree: then reduce the heat to 300 degrees and bake an additional 20-25 minutes.
