Tyler Pudding

Tyler Pudding in honor of John Tyler who was born March 29

  • ¼ cup butter
  • 2 ½ cups sugar, divided
  • 3 whole eggs
  • ¼ teaspoon salt
  • ½ cup heavy cream
  • 1 teaspoon vanilla
  • ½ coconut, freshly graded
  • 2 – 9 inch pie shells

Cream butter and ½ of the sugar well.  Beat eggs well and gradually add remaining sugar, beating consistently.  Add salt.  Mix and cream well and add vanilla.  Stir in coconut and pour into partially baked pie shell.

Bake in low temperature (300 degree) oven for about 20 minutes until set.

If you like lightly toasted coconut, reserve some of the coconut from the pie and sprinkle it on top.  If it has not browned sufficiently when the custard is set, bake it under broiler for a few minutes with oven door open.
