Green Pistachio Whoopie Pie

Whoopie pies are a favorite in this area. But have you tried a Green Pistachio Whoopie Pie?

  • ⅓ cup shelled pistachios
  • ½ cup buttermilk
  • ½ tsp. vanilla extract
  • ½ tsp. green food coloring
  • 1 ½ tsp. distilled white vinegar
  • ½ cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 cups flour
  • ½ teaspoon baking soda

Classic Marshmallow Filling:

  • 1 cup confectioners sugar
  • ½ cup butter, softened
  • ⅔ cup marshmallow fluff
  • 1 tsp. vanilla

Whoopie Pie directions:

1. Preheat oven 375 degrees. Grease 3-4 baking sheets.

2. Finely chop the pistachios.

3. Combine buttermilk, vanilla, food coloring and vinegar in bowl, combine and stir.

4. Put butter & sugar in large mixing bowl. Beat until light and fluffy. Beat in egg.

5. Sift flour and baking soda into bowl, add chopped pistachios (reserving 1 Tbsp. of pistachios)and buttermilk mixture. Beat until well combined.

6. Spoon batter onto prepared sheets, 3 inches apart. Sprinkle reserved pistachios equally on top of 10 mounds of batter.

7. Bake 10-12 minutes. Transfer to wire rack and let cool.

8. When whoopies are cool, match each pistachio top with closest half.

9. Spread marshmallow filling on one half and top with the second.

Marshmallow Filling Directions: 

1. Sift confectioners sugar in a bowl.

2. Put butter and marshmallow fluff in large mixing bowl. Beat together for 3 minutes, until light and fluffy.

3. On low speed gradually add the confectioners sugar to marshmallow fluff mixture. Add vanilla and beat for additional 3 minutes.

4. Use immediately.
